Abstract Barley is the fourth largest cereal crop in world. It mainly used for feeding, beer production and food. receiving more attention from both agricultural food scientists because of its special chemical composition health benefits. In comparison with other crops, including wheat, rice maize, barley grains are rich dietary fiber (such as β-glucan) tocols, which beneficial to human health. well proved that diets those chemicals can provide protection against hypertension, cardiovascular disease, diabetes. has been widely recognized have great potential a healthy or functional this review, we present information about studies on physical structure grain distribution main components, nutrient their benefits, approaches improving utilizing grain. With development processing technologies, components grains, especially β-glucan, be efficiently extracted concentrated. Moreover, improved by precise breeding agronomic approaches. The review highlights foods, may instructive better utilization processing.
